People from southern China love rice noodles. Here are some of our favorite picks.

1. Guilin Noodles 桂林米粉

Guilin noodles often contain gravy, fried peanuts, sour soybeans, chopped scallions, and thin slices of meat. The key to their flavor is the soup, which is slow-boiled for several hours with as many as 20 ingredients, including dried tangerine peel, star anise, and ginger.

Liuzhou snail noodles are spicy and contain river snails as the main ingredient. Other ingredients include sour bamboo shoots, dried agarics, fried tofu skin, peanuts, and vegetables. Despite quite possibly being drenched in sweat after your meal, we bet you’ll still want another bowl.

Yunnan cross bridge noodles are eaten differently than others. The soup, made from fresh chicken, pig bones and ham, is boiled before being served at the table. Rice noodles and raw ingredients are presented and cooked by the guest, kind of like a hotpot.

The secret of Guizhou lamb noodles lies in the fresh lamb and savory soup.  The taste is markedly unique and difficult to describe. Chopped scallions give it a mild flavor but you can add some chili oil if you prefer spicy.

Guangdong steamed rice rolls look much different than other entries on this list. The dough is mixed and steamed in a drawer-shaped container, meat, eggs, ham and vegetables are added, and then the whole thing is cut and made into rolls. They are extremely soft and glutinous.

Hainan and its environs are as south as it gets when it comes to Chinese culture, so people here really like their noodles. During festivals, where traditional local food plays a very important role, noodles symbolize good fortune and longevity. Commonly served for breakfast, many types of rice noodles can be found around the island. The Houan variety is made with seafood or pig bones, and often includes shrimp and sea snails.
